Two days into being a vegetarian

A short story on how to create uninspiring meals and stick to your New Year’s resolution.

January 2. Today went definitely better than yesterday. I woke up determined to stay on my vegetarian path. I was a woman with a plan. More specifically a carefully crafted meal plan that included a vegan sausage, a Beyond meat burger patty and leftover beans from yesterday. I was feeling better about myself already.

To celebrate my success of gathering a few vegetarian-friendly items in my fridge, I decided to roll up my sleeves and take my enthusiasm to next level, a.k.a bread making level. “What would taste better than a homemade healthy gluten-free bread for breakfast”, I thought to myself. Surprisingly, I do own a bread maker, but I have never fully used it to its full potential. Or you know, I’ve never used it.

I googled a recipe which seemed simple enough and it didn’t take long before I poured the golden dough into this miraculous machine. Three hours later, my first homemade bread was ready! It smelled delicious and it looked puffy enough until I cut a slice. Then my whole bread collapsed due to a giant vacuum in the middle of the dough. It went from a two-storey majestic bread to a simple one level kind of baked dough. Hm. I’ll have to work on my dough pouring skills.

Long story short, peanut butter with fig jam on my bread attempt tasted incredibly and saved me from being bitterly disappointed. I was again one step closer to figuring this vegetarian thing out because I could add an amazing vegetarian breakfast snacks to the list of the meal experiments that turned out (almost) perfect!
